Orange Chicken and Fried Rice

Dinner at the Miller's a couple weeks ago was particularly a favorite of mine. I made Orange Chicken that I was able to cook in a crockpot for a few hours and some delicious fried rice.
 
The recipes were found on pinterest and can be found below...
 
Orange Chicken
3-4 skinless, boneless chicken breast
1/3 cup all purpose flour
olive oil
1 tsp balsamic vinegar
3 tbsp ketchup
6 oz frozen orange juice from concentrate
4 tbsp brown sugar
 
Cut chicken into small chunks, then place in bowl with flour and coat.
Heat olive oil in skillet and add chicken. Brown sides and then transfer to crcokpot.
Chicken does not need to be fully cooked as it will cook in the crockpot.
 
In a medium bowl, mix balsamic vinegar, ketchup, orange juice and brown sugar. Once mixed pour over chicken mixture in crockpot, stir, and cook.
Low 2-3 hours or High 5-6 hours.
 
Fried Rice
3 cups cooked white rice (day old is best) I used a bag of Uncle Ben's brown rice 90 second
3 tbsp of sesame oil
1 cup frozen peas (thawed)
1 cup frozen carrots (thawed)
1/2 small onion
2 tsp minced garlic
2 eggs slightly beaten
1/4 cup soy sauce (low sodium)
 
Heat oil on medium heat in skillet. Add peas, carrots, onion and garlic.
Stir fry until tender.
Lower heat to medium-low and push to one side.
Pour eggs to open side and scramble. Then add rice and soy sauce.
Mix all together and heat through.
 
 
Here is how it all turned out. Minus the crab rangoon, which did not turn out.

Thrown Together

I am not really one to throw my hair up and be done with it. I normally wear it down and stress about every strand and how it looks. Well, this past weekend there was no time to care and no time to do anything, but to throw it up and pray for the best outcome... I have to say I am not at all to upset about it. Turned out to be not so bad and I think it will become a great addtion to my one hair down style that I wear daily.

P.S. This will be perfect for an after run post shower...

Little Miss Thing didn't look so bad herself, but how can you when you are naturally beautiful like her.

Flamingo

This dress is a perfect summer staple. It's pink and has Flamingos on it. The photo shows the V in the front and the alternate views show the model wearing the dress with the V in the back. Seems to me this could be worn either way, which is an extra perk for me. Can't wait to get this beauty in the mail. I am picturing gold jewelry and nude shoes. Wedges perhaps!!!

First 5K

I wrote this a while ago and finally feel like I can post it...

I started training for my first 5k about 8 weeks ago and this past weekend was the BIG race!!!! Well, okay it is only a 5k, but to me it is more than that. It was a goal, an accomplishment that I wanted to achieve so badly. I always told myself, "You're just not a runner." Well, it was time to prove myself wrong and I was ready on Saturday to say, "I am a runner and I did it."

Unfortunately, I woke up Saturday morning with a forecast of rain, this obviously was not in my favor. I got dressed and ready for the race anyway and headed on my way to Forest Park. As soon as the car was put in park it started sprinkling and the clouds were getting darker. I got out of the car and headed to the start line and by then it was coming down. I stood there with my husband and friends for 30 minutes before they canceled the race due to unsafe weather conditions for the racers. Utter disappointment set in.

Everyone wanted to go get our medals for the race and I was so confused. Why do I deserve this medal? I didn't complete the race and I didn't want a medal saying I did. It would have made me feel shame, like I was saying I did something that I really didn't do. Chris got me a medal anyways and told me that I deserved it for all the hard work that led up to the race. That was what was important. I stuck with the training and I worked hard to get there.

We headed back to the car and went back home. I kept saying over and over again in the car how disappointed I was. I just wanted to be able to finish something that I started. I trained for 8 weeks and I was ready to prove to myself that I could do it and that I stuck with it no matter how hard it may have been at the time.

The more and more I thought of this, I have come to the conclusion that even though I didn't go through the motions of actually running in Forest Park for 3.1 miles, I did with the it and I could do it on my own. I don't need to sign up for a race to set a goal for myself. I can accomplish this on my own. I am going to go ahead and run my 5k and I can tell myself, "You did it!!!"

To Buy or Not To Buy

In my life, this has become a daily question!!! I just love having new and fresh things. I like to have everything perfectly together and I fret about having it all look right. I am not sure if that is the impression people get when walking into my home or seeing me walking down the street or shopping in a store, but for me this is something I always try to achieve. With that being said, I like to have something for everything.

For instance, if I had a wine party at my home and was going to use the outside deck wouldn't I want some nice acrylic wine glasses? Of course!!! I already have the matching pitcher that I bought a year or so ago so why not get the glasses?

Black Bean and Salsa Sloppy Joes

Tried a little something different last night in the Miller household. We took part in a Meatless Monday!!! I was skimming through a Parenting magazine one evening and saw this a recipe for Black Bean and Salsa Sloppy Joes. The photo looked so delicious and it seemed so easy to make so of course I tore out the recipe and put it in my "to make pile" of recipes.

Now normally this recipe would have gotten lost in the shuffle or would have never made the next test, which is Chris approving of the meal selection. Don't get him wrong, he will eat almost anything I make and he doesn't actually dictate the meals in our house, but it is nice to have him make the meal selections from time to time to keep the guessing work out of my realm.

So, this past weekend I gave him a stack of new recipes that I have been wanting to try and told him to pick one. He actually picked the Vegetarian option. I was shocked, but excited at the same time!!! It looked so good and I was excited to break out and make something we normally wouldn't make. Needless to say, since I am posting about it, he loved it and so did I.


Serves 4: In a skillet, heat 2 tsp olive oil over medium heat. Add 3 minced garlic gloves and saute for 1 minute. Stir in 2 1/2 cups rinsed and drained canned black beans, one 15 oz jar chunky salsa, 1 tbsp each brown sugar and Worcestershire sauce, 1 tsp Dijon mustard, 1/2 tsp cumin and 1/4 tsp salt. Bring to a simmer and cook for 10 minutes. Spoon onto whole-wheat buns and top with shredded cheddar cheese.

Sloane's 1st Easter

You would think that every major holiday that comes our way for Sloane is like going to the Grammy's for her. I mean the thought and effort I put into every outfit is a bit ridiculous. Should I really care though? Well at the moments of trying to pick her dress out I was stressed to the max. I'm pretty sure there should be a pill for the amount of stress one can have over their daughter's 1st Easter dress.  Oh well, I however, love it and don't care that I stress about little stuff!! It doesn't make me a bad parent. It just means I care and it means a lot to me to see her cute and happy. I have been waiting for moments like this for quite sometime now. I always imagined dressing up my baby girl in the cutest dresses that not only reflect her personality, but a bit of myself as well.

Needless, to say the outfit was just as perfect as she is. Sample here.
I especially love the fact that she looks a bit like a bunny herself with the teeth she has. Ha!!!

I slaved over her Easter basket along with some goodies for my niece and nephews. I was a bit pinterest inspired and made carrots using a pasty bag, gold fish and some green string. I then made s'mores using peeps instead of traditional marshmallows. They turned out really cute, but I think I cared more about them than the kiddos. Here is what the Easter basket looked like.
You can see she is also ready for the beach with a swim suit, matching swim hat, cover up, jelly sandals and some fun sunglasses.
