Orange Chicken and Fried Rice

Dinner at the Miller's a couple weeks ago was particularly a favorite of mine. I made Orange Chicken that I was able to cook in a crockpot for a few hours and some delicious fried rice.
 
The recipes were found on pinterest and can be found below...
 
Orange Chicken
3-4 skinless, boneless chicken breast
1/3 cup all purpose flour
olive oil
1 tsp balsamic vinegar
3 tbsp ketchup
6 oz frozen orange juice from concentrate
4 tbsp brown sugar
 
Cut chicken into small chunks, then place in bowl with flour and coat.
Heat olive oil in skillet and add chicken. Brown sides and then transfer to crcokpot.
Chicken does not need to be fully cooked as it will cook in the crockpot.
 
In a medium bowl, mix balsamic vinegar, ketchup, orange juice and brown sugar. Once mixed pour over chicken mixture in crockpot, stir, and cook.
Low 2-3 hours or High 5-6 hours.
 
Fried Rice
3 cups cooked white rice (day old is best) I used a bag of Uncle Ben's brown rice 90 second
3 tbsp of sesame oil
1 cup frozen peas (thawed)
1 cup frozen carrots (thawed)
1/2 small onion
2 tsp minced garlic
2 eggs slightly beaten
1/4 cup soy sauce (low sodium)
 
Heat oil on medium heat in skillet. Add peas, carrots, onion and garlic.
Stir fry until tender.
Lower heat to medium-low and push to one side.
Pour eggs to open side and scramble. Then add rice and soy sauce.
Mix all together and heat through.
 
 
Here is how it all turned out. Minus the crab rangoon, which did not turn out.
